I've made a few batches of rose flavored mead over the years by adding petals to the batch and plan on another batch this year. Does anyone have opinions about the best time of day to pick the roses? I know, the stock answer is "while ye may", but does time make any difference?

Is anyone aware of quality commercial Mead on the east coast? It's a felony to have alcohol shipped to a residence in Maryland. I know Rabbit's Foot is sold in Pennsylvannia. Just don't go up there often enough.
